Can You Vary Soup With Other Ingredients ?

  • Keto: For a keto-friendly version, focus on low-carb vegetables such as zucchini, bell peppers, and spinach.
Skip the starchy ingredients like yuca, plantains, and beans. You can add proteins like chicken or beef to make it more filling.
  • Gluten-Free: The traditional Sopa de Verduras recipe is typically gluten-free as it primarily includes vegetables, but always ensure that the broth you’re using is certified gluten-free.
  • Whole30: For a Whole30-compliant soup, make sure to use homemade broth to avoid hidden sugars or additives.
Also, replace the beans with more Whole30-friendly veggies or a protein like chicken.
  • Vegan/Vegetarian: To make the soup vegan or vegetarian, swap the beef broth for a vegetable broth. For a protein boost, consider adding legumes such as chickpeas or lentils.
  • Variations: You can add or substitute with various vegetables like tomatoes, kale, or corn-based on your preference. To add an extra protein punch, consider including tofu, tempeh, or even quinoa.
If you want to spice it up, add a bit of jalapeno or habanero pepper.

Can I Make Soup In A Slow Cooker Or Instant Pot?

Slow Cooker Method

  • Prepare your vegetables as per the original recipe.
  • Place all the ingredients in your slow cooker except for the cilantro and the kidney beans.
  • Cook on low for 6-8 hours or high for 3-4 hours.
  • 30 minutes before the end of the cooking time, add the kidney beans.
  • Just before serving, stir in the chopped cilantro. Adjust the seasoning if necessary.
  • Serve hot with your choice of garnish.

Instant Pot Method

  • Set your Instant Pot to the sauté mode. Add the olive oil, onions, garlic, and sauté until the onions are translucent.
  • Add all other ingredients except the cilantro and kidney beans to the Instant Pot.
  • Close the lid and set the Instant Pot to ‘Manual’ or ‘Pressure Cook’ mode. Cook on high pressure for 10 minutes.
  • Once the cooking time is over, let the pressure release naturally for 10 minutes, then do a quick release.
  • Open the lid and switch back to the sauté mode. Add the kidney beans and let the soup simmer for 10 more minutes.
  • Stir in the chopped cilantro just before serving, and adjust the seasoning if needed.
  • Serve hot with your desired garnish.

Can I Use Store Bought Broth Or Should I Make My Own?

Store-Bought Broth

  • This is a convenient and time-saving option. Many high-quality, flavorful broths are available in most supermarkets.
  • When buying, look for low-sodium versions to control your soup’s salt level better. Also, if you have specific dietary restrictions or preferences, various options are available, including gluten-free, organic, and vegetable broths.

Homemade Broth

  • Making your own broth can be more time-consuming, but it allows for complete control over the ingredients and flavors.
  • It’s an excellent way to use up leftover bones and vegetable scraps, and it typically contains less sodium and no additives or preservatives.

How To Serve?

  • Temperature: Soup should be served hot but not scalding. Allow it to cool a bit before serving so it’s at a comfortable eating temperature.
  • Bowl Selection: Opt for deep, wide bowls to easily accommodate enough soup and vegetables. Warmed bowls can also help to keep the soup hot for longer.
  • Accompaniments: Depending on the occasion, you might serve the soup with some crusty bread or a side salad. These can complement the flavors of the soup and add a contrasting texture.
  • Garnish: Remember a final sprinkle of fresh herbs or a swirl of good olive oil to brighten up the dish.
For Sopa de Verduras, fresh cilantro would work perfectly. A garnish makes the soup look more appealing and adds an extra layer of flavor.
  • Presentation: Serve the soup in a clean bowl, and wipe off any spills on the rim.
  • Portion: Be careful not to overfill the bowl. It’s better to offer seconds than to serve too much at a time, which can cool rapidly and be difficult to eat.

Perfect Side Dishes

  • Sandwiches: A light, refreshing sandwich could pair nicely. Consider something like a Caprese sandwich with fresh mozzarella, tomatoes, basil, and a drizzle of balsamic reduction.
A grilled cheese sandwich would also work well, offering the soup a pleasant, crispy contrast.
  • Salads: A crisp, tangy salad could balance the warm, hearty soup. A simple mixed green salad with a citrus vinaigrette, a classic Greek salad, or a fresh tomato and cucumber salad could complement the soup nicely.
  • First Courses: Consider a light first course if the soup is part of a larger meal. Ceviche, a fresh, tangy seafood dish, would prepare the palate for the flavors in the soup. A plate of assorted tapas could also be an excellent choice.
  • Breads: A slice of crusty artisan bread or warm, fluffy dinner rolls would be a perfect accompaniment to help scoop up the soup. For a Latin touch, consider serving with arepas or tortillas.

Storage And Make Ahead

  • Storage: Allow the soup to cool completely before transferring it to an airtight container. Store in the refrigerator for up to 3 days.
  • Make Ahead: This soup is perfect for making ahead. Prepare the soup as directed, but do not add the final garnishes. Allow the soup to cool completely, then transfer it to an airtight container and refrigerate for up to 2 days. When ready to serve, reheat gently on the stovetop, adding the garnishes just before serving for maximum freshness and flavor.

What Can We Do With Leftovers?

  • Reinvent It: You can add some cooked pasta, rice, or quinoa to the leftover soup for a new spin. Or, toss in some cooked chicken, beef, or tofu for additional protein.
  • Blend It: Blend the leftover soup to create a creamy vegetable soup. You may wish to add some cream or coconut milk for extra richness.
  • Use as a Sauce: Puree the soup and use it as a sauce for pasta or grains. It can also make a delicious, healthy sauce for fish or chicken.
  • Stir-Fry Base: Use the vegetables from the soup in a stir-fry. Add some proteins and a bit of soy sauce or teriyaki sauce, and serve over rice or noodles.

TIPS

  • Enhance the flavor of your Sopa de Verduras by roasting the vegetables before adding them to the soup. This will add depth and richness to the dish.
  • For a heartier soup, add cooked chicken or beef to the broth. Shredded rotisserie chicken works well and adds a nice flavor.
  • Consider adding a squeeze of lime juice to each bowl before serving. The citrusy kick will brighten up the flavors of the soup.
  • Add a handful of chopped cilantro right before serving for a fresh, herbaceous flavor.
  • For a spicy kick, add a diced jalapeño or serrano pepper to the soup while it simmers. Adjust the amount according to your heat preference.

Peel and chop all the vegetables as specified in the ingredient list. Rinse and drain the canned white kidney beans.
  • Sauté Onions and Garlic

  • Final Touches
Just before serving, add the chopped cilantro to the soup. Stir well to incorporate the cilantro and remove the pot from the heat.
