- It won’t break your bank! – While there are 18 ingredients, most of these ingredients are frozen vegetables, spices, or canned goods, a lot of it you may already have in your fridge, freezer, or pantry, so it is actually really budget friendly too!
What Do You Need: Ingredients

So, what do you need to make this delicious soup?
Well, there are a lot of ingredients, but most are kitchen staples, so we guarantee you probably already have most of them anyway!
- Olive oil.
- Ground beef.

When it comes to the meat, we use Butcher Box ground beef, in fact, we are quite the fan of Butcher Box ground beef. It is made from 100% grass fed, grass finished cattle, with no added hormones or antibiotics.
It is also a 85/15 blend, which is high enough in protein thanks to its leanness. However, it also adds plenty of flavor as well, so you are never losing out. Flavorful and healthy!
Making Vegetable Soup With Hamburger Beef
Let’s talk you through the basics of it, just in case you found the ingredients list a bit imitating. Truthfully, there are only really 5 steps to making this delicious soup!
Surprised? Don’t be, it is so easy!
- Get yourself a pot, and place the ground beef in, with some oil, placed over medium-high heat and cook for 10 minutes until it is no longer pink!
- Once the beef is no longer pink, add the carrots, celery, and garlic to the pot and continue cooking for another 5 minutes!
- Next, add in the tomatoes, spices, broth, and frozen vegetables to your pot.
- With all these ingredients in, bring the pot to boil for 5 minutes, before you add in your raw macaroni pasta. Now, reduce the heat to a low simmer, and continue to cook for another 10–15 minutes until the pasta is thoroughly cooked all the way through.
- Finally, remove the bay leaves (we love the flavor they give, but no one wants to eat these!) and enjoy your soup!
Making Substitutions

Remember we said that if there was anything in our ingredients list that was not to your taste you could substitute it?
Well, here we are, we have gone through every ingredient that you can substitute right here.

Olive Oil
If you do not wish to use olive oil, you can always substitute it with butter, avocado oil, or even ghee.
Onions Or Garlic
Although we love these, not everyone does, so you can actually totally omit these ingredients if you are on a low FODMAP diet!
Vegetables
If you do not like any of the vegetables on this list you can add in as many other ones, or remove as you please.
You will need a few vegetables in this soup at least, however, if you dislike carrots, you can replace it, or just remove it!
Ground Beef
While we are big fans of 85/15 ground beef, not everyone is. You can always use a leaner ground beef if you want to.
Vegetarians and vegans can also make this soup by substituting with lentils (Also check out Healthy And Hearty Vegan Lentil Stew), or even a plant-based ground beef substitute!
However, do keep in mind that if you use a substitute, you may need to adjust the cooking time accordingly.
We have not tried this with a plant-based substitute, or ground chicken or turkey, however, we are certain it will work with altered cook times!
Broth
You can use any stock or broth in any soup recipe really. You could use a chicken broth, vegetable broth, or beef broth, as they all work interchangeably.
However, for extra healthiness, we tend to use low or no salt broths.
However, you can choose whatever works best for you!
Spices
You can substitute any of the fresh herbs for dried spices, just make sure that you double the amount of fresh herbs if you are substituting dry herbs!
Tomatoes
if you do not have any petite diced tomatoes, you could use a tomato sauce, or even canned crushed tomatoes.
Either way, they will taste amazing. We simply choose petite diced tomatoes because they are cut smaller which is most ideal in soups.
Vegan Options
This soup can be made vegan with enough substitutions, however, if you are concerned, then consider just using our recipe as a guideline for a tasty soup.
How To Serve

This is a very filling soup recipe, and it is great on its own. However, if you do choose to pair it with something, we have a few recommendations for you!
- Fresh bread.
- Crackers.
- Salads: Such as Kale lemon salads, or Kale Quinoa salad.
- Vegetables: Such as Crispy potatoes, Brussels sprouts, and green beans almondine.
How To Store
Sometimes our eyes are bigger than our belly, and we make more soup than we originally needed.
When this happens we consider storing our soups. Most soups with potatoes or dairy in them are not suitable for freezing.
However, this particular soup is great for refrigeration and freezing!
You can store this soup in the fridge for up to 4 days as long as it is in an airtight container.
You can also freeze this soup for up to 3 months.
When you go to reheat this soup, you can do this on the stove or in the microwave, although stove-top reheating is always better.

This easy hamburger meat vegetable soup recipe is delicious, healthy, hearty, and delicious. It only takes 15 minutes to prepare and 20 minutes to cook, totaling at 35 minutes total time to make.
Ingredients
- 1 tbsp olive oil.
- 1 lb Butcher Box ground beef.
- 1 tbsp of minced garlic.
- ½ cup of minced onions, 1 medium onion.
- ½ cup of minced celery, 2 celery ribs.
- 1 cup of coined carrots.
- 4 cups of beef broth.
- 1 14 oz canned petite diced tomatoes.
- 2 Bay leaves.
- ¼ tsp dried parsley.
- ¼ tsp dried basil.
- ¼ tsp dried oregano.
- ¼ tsp salt + more for taste.
- ½ tsp pepper.
- 1 cup of thawed frozen corn.
- 1 cup of thawed frozen peas.
- 1 cup of thawed frozen green beans.
- 1 ½ cups of elbow macaroni.
Step-By-Step

Now, let us move onto how you can make this delicious beef soup with hamburger meat.
Instructions On the Stove Top
- When cooking on the Stove top, get a soup pot and heat up the olive oil, then pop the ground beef into it to brown over a medium high heat for around 10 minutes until the meat is no longer pink.
- After around 10 minutes, or once the meat has browned, add in your garlic, onions, celery, and carrots to the pot, and cook for another 5 minutes.
- Once 5 minutes have passed add in the tomatoes, spices, broth, and frozen vegetables.
- With all these ingredients in the pot bring the pot to a boil for 5 minutes, and then add in your raw elbow macaroni. Now, reduce the heat to a low simmer, and let the soup cook for 10–15 minutes until your pasta has cooked all the way through.
- Once the pasta has cooked, remove the Bay leaves, and dish it up!

- When using a crock pot to make this soup, get a coup bot and heat up the olive oil, then add in the ground beef and cook it over a medium-high heat to brown it for around 10 minutes, or until the beef is no longer pink.
- After this 10 minutes add in the garlic, carrots, onions, and celery. Now, cook these ingredients for an additional 5 minutes.
- Now you want to add in your sautéed vegetables and meat into your crock pot.
- Add the tomatoes, broth, frozen vegetables, and spices to your crock pot, then proceed to cook on a high setting for 4–6 hours or on a low setting for 6–8 hours.
- Around 20 minutes before you are ready to sit down for your dinner, cook up your pasta as per manufacturer directions, then drain and add to the crock pot.
- Now, remove your bay leaves and enjoy your soup!
