  • 2 2 Medium Carrots (Diced)

  • 2 2 Stalks Celery (Diced)

  • 1 1 Medium Yellow Onion (Diced)

  • 1 Cup 1 Chopped Rhubarb

  • 3/4 Cup 3/4 Red Lentils

  • 4 Cups 4 Low-Sodium Vegetable Broth or Chicken Broth (or Water)

  • Kosher Salt (To Taste)

  • 1/2 Tbsp 1/2 Fresh Black Pepper

  • 1/4 Cup 1/4 Chopped Parsley or Dill (or a Mix)
