What Is Lentil And Brown Rice Soup?

Lentil and brown rice soup is a nutrient-dense, hearty dish. It typically comprises lentils and brown rice simmered with a mĆ©lange of vegetables like carrots, celery, and onions. It gets its flavorful depth from cumin, coriander, or bay leaves.Ā

Many recipes start by sautĆ©ing the vegetables to bring out their sweetness, then adding the lentils, rice, and spices and leaving the pot to simmer until everything melds together.Ā

This soup is finished with a squeeze of lemon for a hint of brightness and offers a comforting balance of protein, fiber, and complex carbohydrates, perfect for any meal.

Can I Make Soup In A Slow Cooker Or Instant Pot?

Slow Cooker

  • This method is excellent for developing deep flavors, allowing the soup to simmer for several hours. Add all your ingredients, set the cooker to low, and let it cook for 6-8 hours or until the lentils and rice are tender.Ā
  • You may need to adjust the cooking time if you’re using quick-cooking lentils or pre-cooked rice.

Instant Pot

  • This method is much faster but yields a full, rich flavor soup. SautĆ© your vegetables and spices directly in the Instant Pot using the “SautĆ©” function, then add your lentils, rice, and broth.Ā
  • Seal the Instant Pot and cook on high pressure for about 20-30 minutes. Make sure to allow a natural pressure release for 10-15 minutes before quickly releasing the rest.

Can I Use Store-Bought Broth, Or Should I Make My Own?

Store-Bought Broth

  • This is a convenient option, especially when you’re short on time. When choosing a store-bought broth, choose a low-sodium variety to better control your soup’s salt content. Also, read the labels to avoid unwanted additives or allergens.

Homemade Broth

  • If you have the time and inclination, making your broth can be a great choice. It allows you to have complete control over the ingredients and flavor.
Homemade broth, whether vegetable, chicken, or beef, is typically richer in flavor than most store-bought versions and can bring your soup to the next level.

How To Serve?

  • Serve Hot: This type of soup is best served hot. If it has cooled down, reheat it over medium heat until warm.
  • Garnish: Before serving, add garnishes like fresh herbs (cilantro, parsley), a dollop of yogurt or sour cream, or a sprinkle of cheese. These make the soup look more appealing and add an extra layer of flavor.
  • Serve with A Side: The soup can be a meal on its own, but you can also serve it with a side of crusty bread, a side salad, or a grilled cheese sandwich to make it even more satisfying.
  • Bowl Selection: Choose a deep, wide bowl to serve your soup. It will keep the soup hot for longer and provide ample room for a hearty serving.
  • Presentation: Place the soup bowl on a larger plate to catch any spills and to provide a spot for a spoon. Add a colorful napkin, and you’ve created a pleasing visual presentation.

Perfect Side Dishes

  • Crusty Bread: A slice of warm, crusty bread or a hearty roll is perfect for sopping up the flavorful broth. You could also serve it with a piece of toasted garlic bread for an added flavor punch.
  • Side Salad: A fresh salad can provide a nice contrast to the warm, hearty soup. Consider a simple green salad, a tangy slaw, or a tomato and cucumber salad with a light vinaigrette.
  • Grilled Cheese Sandwich: Pair your lentil and brown rice soup with a melty grilled cheese sandwich for a truly comforting meal.
  • Roasted Vegetables: A side of roasted vegetables, such as carrots, brussels sprouts, or cauliflower, could add a nice texture contrast and help round out the meal.
  • Quinoa Salad: A simple quinoa salad with chopped vegetables and a light dressing can boost protein and fresh flavors.

Storage And Make Ahead

  • Storage: Once cooled, transfer the soup into airtight containers. Store in the refrigerator for up to 4-5 days. For longer storage, freeze in freezer-safe containers for up to 3 months.
  • Make Ahead: Prepare the soup as instructed but stop before adding any fresh herbs or toppings. Allow it to cool completely, then transfer it into containers suitable for freezing. When ready to serve, thaw overnight in the refrigerator and reheat gently on the stove. Add fresh herbs and toppings just before serving for optimal flavor and texture.

What Can We Do With Leftovers?

  • Revamp Soup: Add some fresh veggies, cooked meat, or pasta and heat it for a new take on your original soup.
  • Stuffed Vegetables: Use it as a filling for bell peppers or tomatoes. Top with cheese, bake, and you have a delicious stuffed vegetable dish.
  • Burrito Filling: Use the soup as a hearty filling for burritos or wraps. Just drain off extra liquid so your burrito isn’t soggy.
  • Grain Bowl: Use the soup as a base for a grain bowl. Add fresh vegetables, a protein like chicken or tofu, and a flavorful sauce.
  • Casserole: Mix the soup with some pasta, top with cheese, and bake until bubbly for a quick stew.

TIPS

  • For a richer flavor, sautĆ© onions, garlic, and spices before adding the lentils and rice. This step helps to release their flavors and aromas.
  • Consider using homemade vegetable or chicken broth instead of water for a more flavorful base.
  • Add a splash of lemon juice or vinegar at the end of cooking to brighten the flavors.
  • For added texture, stir in some cooked diced vegetables like carrots, celery, or bell peppers.
  • Garnish each bowl with a dollop of Greek yogurt or a sprinkle of fresh herbs like parsley or cilantro for a burst of freshness.
  • To make the soup creamier, blend a portion of it with an immersion blender before serving.
  • Experiment with different spices such as cumin, paprika, or turmeric to add depth and warmth to the soup.
