2 lbs 2 Yukon Gold Potatoes
1 Tsp 1 Italian Seasoning
1 Tsp 1 Kosher Salt
1/4 Tsp 1/4 Cayenne Pepper
1 Can 1 Evaporated Milk
3 Tbsp 3 Cornstarch
1 Cup 1 Cheddar Cheese
1 Cup 1 Nonfat Plain Greek Yogurt
Crumbled Bacon (To Taste)

Step-By-Step Directions
- Start by lightly coating a 6-quart or larger crock pot with nonstick spray. Then, melt your butter over medium heat in a large pan or skillet.Â
When melted, throw in the onion and saute it until soft. This should take approximately 8 minutes.
Once cooked, add the onions to the slow cooker. - Next, add the potatoes, carrots, salt, Italian seasoning, cayenne pepper, and 3 cups of broth to the crock pot. Give the ingredients a good stir to make sure they combine.Â
After that, cover the crock pot and cook the ingredients on low for 6 to 8 hours.Â
Alternatively, cook the soup on high for 3 to 4 hours. The soup must be cooked until the carrots and potatoes are soft and tender. - With 40 minutes of cooking time left, mix the evaporated milk and cornstarch until there are no lumps. This should only take a couple of minutes.Â
Then, pour the mixture into your crock pot with the other ingredients and give it a good stir.
