Savor the creaminess of this slow-cooked Potato Soup Crock Pot. This dish promises flavor and comfort and is infused with Italian seasoning, enriched with cheddar cheese, and smoothed with Greek yogurt. Perfect for chilly days!

Ingredients

  • 2 Tbsp 2 Unsalted Butter

  • 1 1 Yellow Onion (Diced)

  • 3 3 Carrots (Diced)

  • 2 lbs 2 Yukon Gold Potatoes

  • 1 Tsp 1 Italian Seasoning

  • 1 Tsp 1 Kosher Salt

  • 1/4 Tsp 1/4 Cayenne Pepper

  • 1 Can 1 Evaporated Milk

  • 3 Tbsp 3 Cornstarch

  • 1 Cup 1 Cheddar Cheese

  • 1 Cup 1 Nonfat Plain Greek Yogurt

  • Crumbled Bacon (To Taste)

  • Fresh Chives (To Taste)

Step-By-Step Directions

  • Start by lightly coating a 6-quart or larger crock pot with nonstick spray. Then, melt your butter over medium heat in a large pan or skillet. 
    When melted, throw in the onion and saute it until soft. This should take approximately 8 minutes.
    Once cooked, add the onions to the slow cooker.
  • Next, add the potatoes, carrots, salt, Italian seasoning, cayenne pepper, and 3 cups of broth to the crock pot. Give the ingredients a good stir to make sure they combine. 
    After that, cover the crock pot and cook the ingredients on low for 6 to 8 hours. 
    Alternatively, cook the soup on high for 3 to 4 hours. The soup must be cooked until the carrots and potatoes are soft and tender.
  • With 40 minutes of cooking time left, mix the evaporated milk and cornstarch until there are no lumps. This should only take a couple of minutes. 
    Then, pour the mixture into your crock pot with the other ingredients and give it a good stir.
    The crock pot can then be covered and left to cook for 35 minutes.
  • Your potato soup is nearly ready to be served (Also check out Sausage Potato Soup). Before serving your potato soup, stir in the cheddar cheese and Greek yogurt. 
    Once the cheese has melted, you can serve the soup with garnish and side dishes.
    If you like a thicker soup, mash the potatoes in the crock pot. On the other hand, if you prefer a thinner soup, add some more broth.
